Ole Smokes Chicken Dinner

Ingredients

  • 1 bunch asparagus
  • 1 tbsp (15 mL) extra virgin olive oil
  • 1 tsp (5 mL) dried oregano
  • 4 boneless skinless chicken breast halves
  • 1/4 cup (60 mL) plain nonfat yogurt
  • 1/2 cup (125 mL) salsa
  • Instructions

    1. 1 Brown chicken in pan with a little oil.
    2. 2 Rinse and trim asparagus and lay into the bottom of a large, rectangular casserole dish. Drizzle with olive oil. Lay chicken breasts on top.
    3. 3 Mix together yogurt and salsa and spread evenly over chicken.
    4. 4 Bake, uncovered in 350°F (175°C) oven for 40-50 minutes until internal temperature reads 165°F (74°C).
    5. 5 Serve with corn chips and additional salsa.
