Croissant BLT with Sautéed Chicken

The French croissant is combined with the American BLT toppings making this sandwich perfect to enjoy for dinner or lunch.

Ingredients

  • 2 croissants, butter or whole wheat
  • 1 tbsp (15 mL) olive oil
  • 2-4 boneless, skinless chicken thighs
  • 1 tsp (5 mL) mayonnaise
  • 1 tsp (5 mL) Dijon mustard
  • 1 tsp (5 mL) honey
  • 2 slices bacon, cooked
  • 2 leaves lettuce
  • 4 slices tomato(es)
  • 4 slices old cheddar cheese
  • salt, to taste
  • pepper, freshly ground, to taste
  • Instructions

    1. 1 In a frying pan, sauté whole chicken thighs in olive oil over high heat for about 10 minutes.
    2. 2 In a bowl, stir together the mayonnaise, Dijon mustard and honey.
    3. 3 Spread both sides of the croissant with the mayonnaise sauce and fill with the sautéed chicken (cut into thin slices), bacon, tomato, cheese and lettuce.
    4. 4 Add salt and pepper to taste and serve with raw vegetables and a homemade dip.
