Ingredients
Marinade:
- 1/2 cup (125 mL) vegetable oil
- 1 tsp (5 mL) tarragon
- 1/2 tsp (2.5 mL) grainy mustard
- 1/3 cup (75 mL) peach & orange purée
- 1/4 cup (60 mL) lemon juice
- 1 tsp (5 mL) salt
- 1 tsp (5 mL) black pepper
Sauce:
- 1 cup (250 mL) mayonnaise
- 2 tbsp (30 mL) prepared horseradish
Coronation Creation Chicken Sandwich:
- 6 chicken breasts, 5 oz
- 1 head Romaine lettuce
- 1 head leaf lettuce
- 6 sesame buns
- dill pickles, thinly sliced, for garnish
Instructions
- Marinade
- 1 Add all the marinade ingredients in a bowl and mix well.
- 2 Place all the chicken beasts in marinade cover and let sit in refrigerator for 8 hours.
- 3 Remove as much of the marinade from chicken as possible. (This will help reduce the flare-up smoke)
- Sauce
- 1 Mix the mayonnaise and horseradish in a small bowl.
- Coronation Creation Chicken Sandwich
- 1 Grill the chicken breasts on each side for 3 to 4 minutes or until the internal temperature reaches 165˚F (74˚C).
- 2 Spread a dollop of sauce on each side of the bun.
- 3 Place chicken breast lettuce and pickles on bun.
