- 1 Cut each chicken breast into two fillets. Place each fillet between sheets of plastic wrap and flatten with a meat mallet to approximately 1/2 inch thick. Cut chicken into 1 inch strips.
- 2 Heat 2 Tbsp of oil in a large skillet over medium-high heat and sauté sliced onion until soft but not colored. Add garlic and mushrooms and cook until golden brown. Remove onion, garlic and mushrooms from pan but keep warm.
- 3 Increase heat and add the remaining oil and fry chicken until golden brown and completely cooked (when internal temperature reaches 165°F (74°C). Add onions, garlic, mushrooms and season with salt and pepper.
- 4 Stir in sour cream and bring to gently boil. Sprinkle with fresh parsley.
- 5 Serve with rice or pasta.
