Lemon Dijon Yogurt Chicken

This simple recipe makes a rich-tasting, delicious chicken that’s lovely served with green beans and roasted baby potatoes.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup (250 mL) plain yogurt
  • 1 tsp (5 mL) lemon zest
  • 1 tbsp (15 mL) lemon juice
  • 1 tbsp (15 mL) Dijon mustard
  • 1 tsp (5 mL) basil, dried
  • 1/2 tsp (2.5 mL) thyme, dried
  • 1 clove garlic, minced
  • 1/2 tsp (2.5 mL) black pepper
  • Instructions

    1. 1 Whisk together yogurt, lemon zest, lemon juice, mustard, spices and garlic in a large shallow dish. Add chicken breasts, turning to coat well.
    2. 2 Preheat grill.
    3. 3 Place chicken of top of grill over medium-high heat. Close lid and grill 10-15 minutes per side or until a thermometer inserted into the breast reads 165°F (74°C).
