Honey Lemon Chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 1/2 cup (375 mL) water
  • 3/4 cups (175 mL) honey
  • 1 cup (250 mL) lemon juice
  • 2 tbsp (30 mL) cornstarch
  • 1/2 tsp (2.5 mL) ginger, ground
  • freshly ground pepper, to taste
  • Instructions

    1. 1 Preheat oven to 325°F (160°C).
    2. 2 Put chicken breasts in an oven-proof casserole dish.
    3. 3 Combine the rest of the ingredients in a saucepan and heat to boil, stirring constantly.
    4. 4 Pour sauce over chicken and bake in oven until the chicken reaches an internal temperature of 165°F (74°C).
    5. 5 Serve with rice and vegetables.
