Honey-Grapefruit Chicken

Add some zip to your family meal by making this citrus pleaser. Choose a pink or red grapefruit, which are on the sweeter side, for this recipe.

Ingredients

  • 1 pink grapefruit
  • 2 tsp (10 mL) butter
  • 2 tsp (10 mL) olive oil
  • 6-8 boneless chicken thighs
  • 1 tbsp (15 mL) honey
  • 2 bay leaves
  • 6 cloves garlic, whole cloves roasted garlic
  • 1/3 cup (75 mL) low-sodium chicken broth, homemade or purchased
  • salt, to taste
  • pepper, freshly ground, to taste
  • cilantro, fresh, chopped, for garnish
  • Instructions

    1. 1 On a work surface, remove the rind and pith from the grapefruit and use a knife to cut out the segments. Squeeze the juice from the fruit for the sauce after the segments have been removed and set aside.
    2. 2 Heat the butter and oil in a frying pan over medium-high heat. Brown the chicken thighs on both sides.
    3. 3 Add the honey, bay leaves, garlic and chicken broth.
    4. 4 Cover and cook on low heat about 30 minutes, occasionally turning the chicken thighs.
    5. 5 Five minutes before the chicken is done, add the grapefruit segments and reserved juice. Salt and pepper to taste.
    6. 6 Garnish with fresh cilantro.
    7. 7 Serve with orzo (rice-shaped pasta) and squash ribbons with garlic.
