- 1 Place potatoes in a large saucepan with garlic.
- 2 Cover with cold water then add about ½ tsp (2mL) salt. Cover and bring to the boil.
- 3 Reduce heat and simmer gently until very tender, about 20 minutes.
- 4 Drain well.
- 5 Return potatoes and garlic to saucepan and over low heat, mash with chicken broth, sour cream and sage until as smooth as you like.
- 6 Taste and add salt if needed.
