Garlic Smashed Potatoes

This flavourful potato dish is lighter in taste and lower in fat than many recipes!

Ingredients

  • 2 1/2 lbs (1.2 kg) potatoes, peeled and cut into chunks
  • 3 garlic cloves, peeled
  • 1/3 cup (75 mL) chicken broth, undiluted and preferably low-sodium
  • 1/3 cup (75 mL) light sour cream
  • 1 tbsp (15 mL) fresh sage leaves, finely chopped
  • 1/2 tsp (2.5 mL) dried sage
  • salt to taste
  • Instructions

    1. 1 Place potatoes in a large saucepan with garlic.
    2. 2 Cover with cold water then add about ½ tsp (2mL) salt. Cover and bring to the boil.
    3. 3 Reduce heat and simmer gently until very tender, about 20 minutes.
    4. 4 Drain well.
    5. 5 Return potatoes and garlic to saucepan and over low heat, mash with chicken broth, sour cream and sage until as smooth as you like.
    6. 6 Taste and add salt if needed.
