- 1 Heat oven to 400°F (200°C).
- 2 Line baking sheet with foil and spray with cooking spray. Put chicken pieces one at a time in between plastic wrap or waxed paper and gently pound with flat side of meat mallet or rolling pin until 1/2-inch (1.25 cm) thick.
- 3 Mix pesto and mayonnaise together and put in a dish. Mix together bread crumbs and cheese and put on a plate. Dip chicken into pesto mixture then dip in bread crumb mixture. Place on baking sheet.
- 4 Bake 15 to 20 minutes, turning once, until juices run clear or internal temperature is 165°F (74°C) and coating is golden brown.
