Ingredients
Chicken Caesar Salad:
- 2 cups (500 mL) chicken, cooked, diced
- 8 slices bacon, cooked, crumbled
- 2 tomato(es), cut into wedges
- 1 cup (250 mL) croutons, homemade or purchased
- 6 cups (1.5 L) Romaine lettuce, torn in pieces
- 2 tbsp (30 mL) parsley, fresh, chopped
Dressing:
- 1/2 cup (125 mL) mayonnaise
- 2 cloves garlic, minced
- 1 tbsp (15 mL) anchovy paste
- 1 tbsp (15 mL) Worcestershire sauce
- 1 tbsp (15 mL) lemon juice
- 1 tbsp (15 mL) red wine vinegar
- 1/4 tsp (1.25 mL) hot pepper sauce
- 1/4 tsp (1.25 mL) pepper
- 1/4 cup (60 mL) olive oil
- 1/2 cup (125 mL) Parmesan cheese
Instructions
- Chicken Caesar Salad
- 1 In a large salad bowl combine chicken with bacon, tomatoes, croutons, lettuce and parsley.
- Dressing
- 1 Combine all ingredients for the dressing in a blender or food processor.
- 2 Blend until smooth and toss with salad.
