Tzatziki Chicken Salad

This light and refreshing salad is the perfect dish to enjoy for lunch or dinner on a hot summer day.

Ingredients
1 1/2 cups (375 mL)
coarsley chopped cooked boneless chicken meat
3 1/2 oz (100 g)
crumbled feta cheese
1/4 cup (60 mL)
minced green pepper
1/4 cup (60 mL)
minced red pepper
1/4 cup (60 mL)
minced green onion
1/4 cup (60 mL)
kalmata olives
5 oz (145 g)
Tzatziki sauce
2 tbsp (30 mL)
oregano
2 tbsp (30 mL)
thyme
1/2 tsp (2.5 mL)
salt
1/2 tsp (2.5 mL)
white pepper
Instructions

Combine all ingredients in large bowl and mix lightly until all ingredients are coated with Tatziki Sauce. Chill until ready to serve. Excellent on a coissant, in pitas or tortilla wraps.
