Roast Chicken Breast & Eggs in Ramekins

Try sliced, smoked deli chicken slices to replace ham in this healthy, baked egg dish. They have great visual appeal and are a nutritious, high protein start to your day.

8 slices chicken, deli roasted
1 tsp (5 mL) olive oil
1/2 cup (125 mL) onions, diced
1 cup (250 mL) chicken breasts, cooked
2 tbsp (30 mL) basil, fresh
1 tsp (5 mL) basil, dried
4 eggs, medium
1/2 cup (125 mL) cherry tomatoes, cut in 8ths
1/2 cup (125 mL) cheddar cheese, shredded
1 Preheat oven to 350°F (175°C). Oil or spray ramekins with vegetable oil cooking spray.
2 Arrange two slices of smoked chicken over bottoms and up sides of each ramekin to cover.
3 Heat oil over medium high heat in a small skillet. Dice onion and cooked chicken. Sauté until onions are soft – about 4 minutes. Add fresh chopped basil last minute of cooking and stir until just to wilted.
4 Crack an egg into each ramekin. Divide the cooked onion and chicken mixture evenly among the dishes.
5 Cut cherry tomatoes into 1/8ths and sprinkle over ramekins. Finish with a sprinkle of grated cheese.
6 Place on baking tray and bake in preheated over 20-25 minutes or until eggs are set to your liking.
