Ole Smokes Chicken Dinner

Ingredients

bunch asparagus
1 tbsp (15 mL)
extra virgin olive oil
1 tsp (5 mL)
dried oregano
4
boneless skinless chicken breast halves
1/4 cup (60 mL)
plain nonfat yogurt
1/2 cup (125 mL)
salsa
Instructions

Brown chicken in pan with a little oil.

Rinse and trim asparagus and lay into the bottom of a large, rectangular casserole dish. Drizzle with olive oil. Lay chicken breasts on top.

Mix together yogurt and salsa and spread evenly over chicken.

Bake, uncovered in 350°F (175°C) oven for 40-50 minutes until internal temperature reads 165°F (74°C).

Serve with corn chips and additional salsa.
