Having a jar of pickled peppers in the fridge means you’re always equipped to add dynamite taste to a sammie or burger with a mere smidgen of effort. Here we used them to rev up chicken burgers along with flavor bursting feta for hits of creaminess.

1 lb (0.5 kg) ground chicken
1/2 tsp (2.5 mL) salt
1/2 cup (125 mL) feta cheese, crumbled
1/4 cup (60 mL) pickled hot peppers, finely-chopped
2 green onion(s), thinly sliced
2 tsp (10 mL) butter
2 tsp (10 mL) oil
sour cream, for garnish
tomato(es), sliced, for garnish
cucumber, sliced, for garnish

1 Place chicken in a wide bowl. Spread out so it covers the widest area possible. Sprinkle with the salt, feta, hot peppers and green onion.
2 Stir with a fork or use your finger to evenly distribute ingredients. Do not overwork because that toughens the burger. Divide in four, then form each into a burger about ½ inch (1 cm) thick. Press down in the centre with your thumb to form an indent.
3 Melt butter in a wide frying pan or coat with oil and place over medium heat. When hot, add burgers. Cover and cook over medium heat until browned, about 2 minutes a side. Then decrease heat to medium-low. Cover and continue cooking about 4 to 5 more minutes a side. Serve in warm buns topped with dollops of sour cream, sliced ripe tomatoes and thinly sliced cucumber.
