Honey Lemon Chicken

This prizewinning recipe is quick, oh-so-easy, and flavourful to boot. Your kids will ask for it by name!


4 boneless, skinless chicken breasts
1 1/2 cup (375 mL) water
3/4 cups (175 mL) honey
1 cup (250 mL) lemon juice
2 tbsp (30 mL) cornstarch
1/2 tsp (2.5 mL) ginger, ground
freshly ground pepper, to taste


1 Preheat oven to 325°F (160°C).
2 Put chicken breasts in an oven-proof casserole dish.
3 Combine the rest of the ingredients in a saucepan and heat to boil, stirring constantly.
4 Pour sauce over chicken and bake in oven until the chicken reaches an internal temperature of 165°F (74°C).
5 Serve with rice and vegetables.
