Grilled Chicken, Watermelon and Tomato Salad

Watermelon and tomatoes may seem like an unlikely pairing, but the sweetness of the fruit works perfectly with the slight acidity found in the tomatoes. Toss in crisp slices of romaine lettuce, and you’ve got a meal that not only tastes fresh and light, but looks great on your picnic table. Ingredients
Grilled Chicken, Watermelon and Tomato Salad:

boneless, skinless chicken breast(s)
1/4 cup (60 mL)
barbecue sauce
1 tbsp (15 mL)
lemon juice
Watermelon Tomato Salad:
5 cups (1.25 L)
seedless watermelon, diced
4
plum tomatoes, diced
1 cup (250 mL)
red onion(s), diced
1/4 cup (60 mL)
red wine vinegar
1/4 cup (60 mL)
olive oil
4 cups (1 L)
Romaine lettuce, shredded
1/2 tsp (2.5 mL)
black pepper, freshly ground
Instructions
Grilled Chicken, Watermelon and Tomato Salad

Preheat grill over medium-high heat.

Whisk together barbecue sauce and lemon juice in a small bowl. Pour over chicken breasts and coat on both sides with a brush.

Turn off burners on one half of the gas grill. Set chicken on cool side of grill and close lid. Grill chicken for 10 minutes, turn and cook another 10 minutes or until the temperature of the thickest part registers 165°F (74°C).

While the chicken is cooking prepare the salad by combing all the ingredients in a large bowl.

Serve salad with the grilled chicken pieces.
