Glazed Apricot Chicken

Apricot jam creates a sticky-sweet glaze for this chicken that’s perfect served on a bed of rice.


2 lb (1 kg) chicken breasts
2 lb (1 kg) chicken thighs
2 tbsp (30 mL) apricot jam
1 tbsp (15 mL) Dijon mustard
1 tbsp (15 mL) tarragon, fresh, minced
1 tsp (5 mL) tarragon, dried


1 Preheat the oven to 350°F (175°C).
2 Combine jam, mustard and tarragon in a small saucepan. Heat just enough to melt jam and blend ingredients.
3 Place chicken pieces in a single layer in a baking dish, just large enough to hold all the chicken. With a pastry brush or a spoon, coat each piece of chicken with jam mixture. Cover baking dish with foil and bake for approximately 30 minutes or until juices run clear.
4 Spoon extra sauce from baking dish on chicken when serving.
5 Serve with vegetables of your choice.
