Coronation Creation Chicken Sandwich

This grilled chicken sandwich packs a punch of flavour. The tangy marinade infuses the chicken with hints of orange, peach and tarragon while the horseradish mayo gives it that extra kick. Ingredients
Marinade:
1/2 cup (125 mL)
vegetable oil
1 tsp (5 mL)
tarragon
1/2 tsp (2.5 mL)
grainy mustard
1/3 cup (75 mL)
peach & orange purée
1/4 cup (60 mL)
lemon juice
1 tsp (5 mL)
salt
1 tsp (5 mL)
black pepper
Sauce:
1 cup (250 mL)
mayonnaise
2 tbsp (30 mL)
prepared horseradish
Coronation Creation Chicken Sandwich:

chicken breasts, 5 oz

head Romaine lettuce
1
head leaf lettuce
6
sesame buns
dill pickles, thinly sliced, for garnish
Instructions
Marinade

Add all the marinade ingredients in a bowl and mix well.

Place all the chicken beasts in marinade cover and let sit in refrigerator for 8 hours.

Remove as much of the marinade from chicken as possible. (This will help reduce the flare-up smoke)
Sauce

Mix the mayonnaise and horseradish in a small bowl.

Grill the chicken breasts on each side for 3 to 4 minutes or until the internal temperature reaches 165˚F (74˚C).

Spread a dollop of sauce on each side of the bun.

Place chicken breast lettuce and pickles on bun.
