Coronation Creation Chicken Sandwich

This grilled chicken sandwich packs a punch of flavour. The tangy marinade infuses the chicken with hints of orange, peach and tarragon while the horseradish mayo gives it that extra kick. This sandwich will easily become a family favourite! Chef Fouad El-Jadayel is the Executive Chef at Centurion Conference and Event Center.



1/2 cup (125 mL) vegetable oil
1 tsp (5 mL) tarragon
1/2 tsp (2.5 mL) grainy mustard
1/3 cup (75 mL) peach & orange purée
1/4 cup (60 mL) lemon juice
1 tsp (5 mL) salt
1 tsp (5 mL) black pepper


1 cup (250 mL) mayonnaise
2 tbsp (30 mL) prepared horseradish

Coronation Creation Chicken Sandwich:

6 chicken breasts, 5 oz
1 head Romaine lettuce
1 head leaf lettuce
6 sesame buns
dill pickles, thinly sliced, for garnish



1 Add all the marinade ingredients in a bowl and mix well.
2 Place all the chicken beasts in marinade cover and let sit in refrigerator for 8 hours.
3 Remove as much of the marinade from chicken as possible. (This will help reduce the flare-up smoke)


1 Mix the mayonnaise and horseradish in a small bowl.

Coronation Creation Chicken Sandwich

1 Grill the chicken breasts on each side for 3 to 4 minutes or until the internal temperature reaches 165˚F (74˚C).
2 Spread a dollop of sauce on each side of the bun.
3 Place chicken breast lettuce and pickles on bun.
