Chicken Stroganoff

Stroganoff is perfect when you need to serve your family a quick meal.


4 chicken breasts, skinless, boneless
3 tbsp (45 mL) olive oil
1 large onion thinly sliced
1 garlic clove
1 cup (250 mL) sliced mushrooms
1 1/4 cup (315 mL) sour cream
salt and pepper to taste
chopped fresh parsley for garnish


1 Cut each chicken breast into two fillets. Place each fillet between sheets of plastic wrap and flatten with a meat mallet to approximately 1/2 inch thick. Cut chicken into 1 inch strips.
2 Heat 2 Tbsp of oil in a large skillet over medium-high heat and sauté sliced onion until soft but not colored. Add garlic and mushrooms and cook until golden brown. Remove onion, garlic and mushrooms from pan but keep warm.
3 Increase heat and add the remaining oil and fry chicken until golden brown and completely cooked (when internal temperature reaches 165°F (74°C). Add onions, garlic, mushrooms and season with salt and pepper.
4 Stir in sour cream and bring to gently boil. Sprinkle with fresh parsley.
5 Serve with rice or pasta.
