Blueberry Pecan Glazed Chicken

While many of these ingredients sound like they belong in a dessert, blueberries, maple, and pecans create a versatile sauce. This chicken is just as home alongside greens and mashed potatoes as it is sliced and served on a cheese plate.

Ingredients

bone-in, skinless chicken breasts
1 tbsp (15 mL)
onion(s), diced
1/4 tsp (1.25 mL)
garlic, minced
1 tbsp (15 mL)
butter
1 1/2 cup (375 mL)
blueberries
1 tbsp (15 mL)
maple syrup
1 tbsp (15 mL)
pecans, chopped
1/4 tsp (1.25 mL)
apple cider vinegar
salt, pinch
pepper, pinch
Instructions

Preheat barbecue to medium heat.

Grill chicken breasts, bone side down, for about 14 minutes.

Turn chicken and continue grilling until a meat thermometer inserted into the chicken reads 165°F (74°C) (about 10-14 minutes).

Sauté onion and garlic in butter for 2 minutes.

Add remaining ingredients, bring to a boil then reduce heat and simmer until sauce is slightly thickened.

Spoon sauce over chicken breasts and serve immediately.
