Hawaiian Chicken Casserole

Serves: 4


1 pound boneless chicken breast, cut into cubes
1 tbsp olive oil
1 can pineapple tidbits with juice
4 tbsp brown sugar
1 1/2 cups tomato sauce
1 can chicken broth
1 1/2 ginger, powdered
1 tsp fresh parsley, chopped
salt and pepper to taste


Brown chicken in olive oil and place in a medium sized casserole dish.
Combine remaining ingredients except parsley. Pour over chicken.
Bake uncovered for 45 minutes in 350°F oven.
Remove from oven and sprinkle with parsley. Serve.
