Chicken on the Coop

Serves: 4 to 6


4 - 6 chicken breasts, cut into small cubes
4 cups mushrooms, sliced
1 small onion, diced
2 garlic cloves, sliced
4 tbsp oil
1 tsp rosemary
1 tbsp oregano
1 tsp thyme
2 cups tomatoes, crushed
salt and pepper to taste
hearty bread slices


In a large pan, add oil and chicken. Cook thoroughly. Remove from pan and set aside.
Saute sliced mushrooms, onions and garlic until lightly brown and soft. Add rosemary, oregano and thyme.
Add chicken to mixture and stir in crushed tomatoes. Heat thoroughly and add salt and pepper to taste.
Toast and butter bread. Top bread with chicken mixture. Serve.
