Broiled Chicken Salad

Serves: 2


2 boneless chicken breasts
2 servings mixed salad greens
1/4 cup fresh basil leaves
2 tbsp oregano
goat cheese
salt and pepper to taste

2 tbsp lemon juice
1 tbsp extra virgin olive oil
salt and pepper to taste


Prehear broiler on high with rack in middle of oven. Place ovenproof pan in oven and heat for 10 minutes. Reduce broiler to low when hot.
Season chicken breasts with salt and pepper, place in ovenproof pan and broil. Cook until done and top with desired amount of goat cheese.
Toss salad greens with lemon juice, salt, pepper and olive oil.
Divide greens onto 2 plates and place chicken breast on top. Serve.
